Fried Rice (Quick and Easy Meal)

Ingredients

  • 350 g pre-cooked long grain rice
  • 3 1/2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • eggs, beaten
  • 4 tbsp peanut oil or vegetable oil
  • 2 tbsp shredded carrots
  • 4 tbsp frozen peas, thawed
  • 1 spring onion, sliced
  • 2 garlic cloves, minced
  • Sale and white pepper

Directions

1. Add a little oil to a hot wok, drop in the egg and stir rapidly to break it up.

2. Add another drop of oil to the wok, followed by the garlic and the rice. Stir until well mixed.

3. Add the peas, carrots, and spring onions and mix thoroughly.
4. Add the oyster and soy sauces and season with salt and white pepper. Toss it all together and remove from the heat.
5. Spoon the egg fried rice into individual serving bowls and it is ready to serve.

Cooking Tips

  • It will be healthier if you use the brown rice, instead of the white one because the brown rice is considered a whole grain.  It has still the bran intact it also has more fiber than white rice.  Brown rice also contains nutrients like magnesium, manganese, and zinc. White rice has reduced levels of these nutrients. 
  • Brown rice takes longer than white rice to cook, so increase the amount of water slightly. Brown rice doesn't have the fluffy texture of white rice, but its nutty flavor and chewy texture makes brown rice a tasty way to get fiber into your diet.
  • This egg fried rice recipe can be modified by using leftover vegetables or meat. It makes a perfect accompaniment to a wide range of fish and meat dishes.  Therefore, you can add another vegetable (such as tomato, broccoli, and asparagus) and meat (sliced chicken, shrimp, even lobster if you can afford) whatever you like.   Or you can delete the peas from the recipe if you don’t like it.  I usually don’t add it in my (Thai) fried rice.
  • White pepper is the perfect choice to use with any Asian dish. Its special flavour goes well with this style of cooking.  But if you don’t have white pepper, the black pepper is OK, too.
